Earlier today, I pulled a package of ground beef out of the freezer, unsure of what I was going to do with it. After a bit of thought, I decided to go with Swedish meatballs and pulled out a package of ground chicken as well. The result was a fabulous supper that had my children and husband returning to the pot for seconds!

Thanks to the world’s longest Spring Break, I’ve have extra time with the kids and time to enjoy new things, like gardening. The gorgeous basil and parsley came right from my backyard. The green onions have been growing in my kitchen window.




It took around 45 minutes from start to finish to make this delightful meal. The finished product was flavorful and cheesy.
